Saw these beauties at the grocery store a couple of days ago
Don't raspberries just yell SUNSHINE...
I have been on a scone "LIKE" lately so when I saw Iced Raspberry Scones on pinterest of course I HAD to pin it. But let's all be honest sometimes when you try a pinterest recipe that looks to die for you just wanna say, "you thought that was good?!".
So when I saw the raspberries at the grocery store the other night I figured I might as well give it a try.
The pinterest picture is on my food board, and they look amazing. (head there for the true official, real step by step recipe)
You will need
2 cups flour
1/4 cup sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup cold butter, cut into small pieces
1/4 cup whipping cream
1/2 cup milk
1 tsp vanilla
1 egg
mix all the dry ingredients.
cut in the butter and start a mixin (with your good ole hands) until it resembles course bread crumbs ....snitch a piece of butter (no one is lookin)
you know the recipe can't be bad with my two fav ingredients...butter and whipping cream!
mix all the wet ingredients together and give them a little stir.
mix the wet and dry ingredients
when it starts to come together turn onto a floured counter and work it together with your hands...
then press into a 10 x 14 rectangle.
now the fun part
sprinkle on the raspberries and then top with 2 TBS sugar
(anna thought they needed a bit more sugar?? raspberries aren't really in season so she may be right and this is probably where i might sprinkle in a bit more) (best to snitch one of those raspberries and see what you think)
roll up the dough tightly from the 10 inch side.
slice the dough into 8 rounds and place them on a parchment lined cookie sheet.
brush the top with a little bit of milk
bake in a 375 degree oven for 20 min until lightly browned
I had to have a sneak peak in the oven!
while you patiently wait ...
for the glaze
2 tbsp melted butter
1 cup of powdered sugar
2 tsp cinnamon
1/2 tsp vanilla
3 to 5 tbsp milk...
(I assume you know to mix it up)
Let your scones cool 10 min before drizzling on the goodness
(I have to say love the smidge of cinnamon in the frosting....yum)
then you guessed it...grab a cup of joe and enjoy!
These would really be lovely for Easter brunch.
when they stare you in the face at the store...go ahead and grab them!
I will make this recipe again!! Although I would like to play with the cooking time a smidge...they are a little wetter than a normal scone (sure because of the raspberries)
